I am so lucky that I have Patrick and Elli. In reality, when I don't want to make "dinner" they are soooooooooo good about easy-peasy dinner night. Tonight, I came home and crashed. After a stress-filled long week of hearing how ineffective my profession is and how we should accept our salary cuts, larger classrooms, and lay-offs with grace, because at the end of the day, at least "you'll still have a job." Today was the tip of the negative iceberg...that's right haters - you can try all you want, but I am PROMISING you that the negativity is all washing away with the drizzling rain that is currently tapping at my window. As of tonight at 11:59PM I am done listening to it. I love my job, I don't do my job for the money (the money is a necessity and it's nice, but it's not why I go to work every day). I go to work because I truly do LOVE teaching. It's my passion and, not to be vain, I don't think I suck at it. Ok, off the soapbox and back to my awesome family. Tonight, tacos and burritos were good enough for them. So simple, so easy, and so quick. From start to finish, 20 minutes total. Corn and flour tortillas. Soooo yum! I wasn't kidding about the "we love Mexican" food vibe in mi casa ;)
Happy cooking!
