Day 14: Breakfast, smreckfast!

Two blogs today; one to make up for missing yesterday, starring yesterday's lunch & today's starring breakfast! I have been craving hash browns and eggs all week, so I figured I might as well satisfy my need to eat those. I also cooked up some bacon for the family, as bacon hasn't been around much the last few months.

I simply used my Vidalia chopper to cut the potatoes, fried them up using non-stick Pam spray (no butter or anything extra) with just a hint of onion for flavor. Those cooked for about 15 minutes while I cooked the bacon (this is extra thick cut bacon cooked extra crispy and blotted with paper towels). Patrick & Elli opted for egg & cheese omelets while I opted for a "yolky" egg style egg. It's especially yummy to break the yolk over the potatoes. Don't knock it til ya try it! Tomorrow night we are back on schedule for dinner. I'll be discussing some delicious kahlua pork with cabbage.
